Salty plum soda
Three ingredients, five minutes and a very cold glass. This is the everyday salty plum drink — lighter than the mocktail, built on syrup so it is consistent every time. A squeeze of lime keeps the salt in check.

Ingredients
- 20 ml salty plum syrup
- 15 ml fresh lime juice
- 200 ml chilled soda water
- Ice cubes
- 1 lime wheel and a small piece of salty plum, to garnish
Make it a cocktail
Add 45 ml of gin, vodka or white rum before the soda and you have a highball. See the cocktail guide.
Method

Pour the salty plum syrup and lime juice into a tall glass.

Fill the glass with ice and stir briefly to chill the syrup.

Top with chilled soda water and stir once, gently, to keep the bubbles alive.

Garnish with a lime wheel and a piece of salty plum. Drink while it is cold and fizzy.
Serving suggestions
- Perfect with fried food, dumplings or anything rich. The sour cuts straight through.
- Make a jug for lunch: 100 ml syrup, 80 ml lime, lots of ice, top with 1 litre of soda.
Variations
Salted rim
Wet the rim and dip it in fine salt mixed with ground plum powder.
Grapefruit soda
Swap half the soda for grapefruit soda for a bittersweet twist.
Plum & mint
Clap a sprig of mint and drop it in before the ice.

Can I use a whole plum instead of syrup?+
Yes. Muddle one seedless plum with the lime and a teaspoon of sugar, then top with soda. The mocktail is built that way.
Is it very salty?+
Only as much as your syrup is. Adjust the lime and soda to taste; the lime is the lever that keeps it balanced.
